Corn Chowder

Fall is just around the corner and in this house, that means it's time for corn chowder! This is such a filling, yummy, easy soup to make. Add cornbread to it and you have a nice fall meal.

Corn Chowder

3/4 cup cooked bacon, chopped
1 medium onion, chopped
4 medium potatoes, chopped
3 cups water
2 15oz. cans cream style corn
2 tsp. salt
pepper to taste
2 cups half & half

Add bacon, onion, potatoes and water in pot and bring to a slow boil. Turn heat to medium-low. Stir, cover and simmer for 15 minutes.

Add corn, salt, pepper and half & half. Simmer uncovered for 1 hour, stirring occasionally.

Serve topped with grated cheese and green onions, or nothing at all!
